Cello-making i.e. Limoncello

This project started when I was attending USF for my undergrad. It began as a basic infusion of vodka and a fruit or habanero pepper or skittles. It wasn’t until about 3 or 4 years ago that I started to perfect my brew. The difference between an infusion vs. a cello is simple syrup and the amount of waiting time. Infusions are 1 part alcohol (vodka) and 1 part fruit or veg and a short waiting period of up to 4 days for most. For cellos, waiting periods could be anywhere from 2 weeks to a few months depending on the ingredient. My first batch of brew was an 80-day meyer lemon limoncello: 40 days of lemon peels and vodka, another 40 days after adding simple syrup.

Cellos are not for sale as I do not have a liquor or seller license. This is just for fun, but seeing that I am a graphic designer, I make my own labels.
